The addition of still red wine to produce rosé gives it muscle and distinction, as well as pungent morello cherry, currant, and blackberry flavors balanced by lemon, yeast, and bread. Planted on north, east, and northeast exposures with chalk and gravel soils, the grapes have a high natural acidity that keeps its dense fruit in exquisite balance.
Pairing: Pair its richness with grilled capon with streaky bacon, duck breast in morello cherry sauce, or lamb chops with bilberries.
