Spain has made its name in the world of quality wine with robust, full-bodied wines – Rioja, Priorat, Ribeira del Duero – but the peninsula is large and geographically diverse, and while most of it gets abundant sun for the lush, dark-fruit wines one associates with it, the province of Galicia, tucked into the northwest corner and cooled and watered by the nearby Atlantic, produces cool-climate wines of stunning quality. Ribeira Sacra, like other riparian wine regions (think Portugal’s Douro, Germany’s Mosel, or France’s northern Rhône), features steep slopes where vineyards must be planted on terraces and all work done by hand – a recipe for excellent wine but one which requires a true enthusiast’s level of dedication. Javier Domínguez possesses this enthusiasm, reviving an old wine estate to make terroir-driven wines in a gravity-fed winery that spills down the slope like the terraced vineyards that feed it. Lalama, an expression of predominant local grape Mencía, is a complex, high-altitude wine made to drink young. A beautiful ruby-red color, it shows an elegant, dry nose of spicy raspberry. Wonderfully structured and balanced, with savory flavors under cherry, berry, and black raspberry fruit, it’s enlivened by spiciness and fresh acidity. The tannins are seamlessly integrated and support the fruit perfectly, making Lalama a true pleasure to drink.

Pairing: Have it with shepherd’s pie, braised short ribs, or Galician lacón con grelos.
