Chateau Biac Cadillac Cotes de Bordeaux 2010

To make vins de garde in Bordeaux is to look always to the future. Pruning, picking, pressing, bottling, putting down, one is less concerned with the wine that is than that which will be. When they took on the challenge of a château, two thousand ten was the sort of vintage the Asseilys moved to Bordeaux to make wine in. Not the Spring, which was cold and slow, nor even June, when hail and fog threatened to induce Winemaker’s Despair, a malaise specific to those who would extract the magic juice that lives so long in the bottle, but through glorious July, August, September, and into early October when the secateurs finally came out and the grapes were secured. Five years on, the proof is apparent. The vintage is old-style Bordeaux, with hard tannins and long-lived fruit, built for decades; the Biac Château bottling, where softer Merlot predominates, is the modern take on such a classic vintage. Drinkable now, it sacrifices no years of potential in the cellar; it is both friendly and serious, with perfectly ripened Merlot fruit in the mouth: blackberry, cherry, and cassis on a framework of Cabernet tannin, with the high acid red-fruit harmonics of both grapes bringing length and depth. It is fun, beautiful, reserved, serious, and a tenth of what it will be, if you have the patience to let it.

Pairing: Then have it with filet mignon, guinea fowl in port, or grilled suckling pig.
