Cave de Bissey Cremant de Bourgogne Brut NV

Here at NWM, we usually shy away from wines made by the caves cooperatives, the local association of growers, finding their emphasis on quantity can make their quality control uneven. But we’re also open-minded, and listen more to our palates than any dogma about What (or Who) Makes a Good Wine, and when we taste something we like, we want to share it with you! Here we present a Crémant made by a ninety-year-old co-op which has throughout its history worked to keep itself on a human scale and make quality wines that respect the land. A natural extension of the limestone ridge that makes up the famous Côte d’Or, the Côte Châlonnaise is also a great place to grow Chardonnay, and the wonderful thing is that the prices are much more reasonable. Made in the Cave itself – a rarity these days, when most sparkling is outsourced – in the traditional method, most labor-intensive and highest-quality sparkling method (it’s the one they use in Champagne), this Blanc de Blancs belongs to the somewhat leaner, sharper style of sparkler. Easy to drink but not lacking in complexity, it shows yellow and green apple with a bit of warm biscuit and brioche that soften it out, nestled in a mellow mousse that goes down with dangerous ease.

Pairing: Have it with oysters (of course), chicken with thyme, or as an aperitif.
